A playful 'Tuber Check' is included with each recipe, adding a game-like element to the traditional cookbook and introducing readers to a variety of underground delicacies, whether they are tubers or not.
In the dishes created by James Beard Award winner Corey Lee, Noma flavor scientist Arielle Johnson, royal baker Claire Ptak, Oaxacan flagbearer Thalia Barrios García, and visual artist Motoyuki Daifu, tubers and their related stems are transformed into fresh salads, fried enyucados, or cool horchata. Swiss Design Award winner Olga Prader brings the book to life with her playful illustrations, taking us on a delectable journey underground.
